RECIPE: Wickedly Delicious Crumpets for Your Tea*


– 2 c. real butter, softened & unsalted
– 5 c. of all-purpose flour
– 1 c. granulated sugar
– 2 tsp. of vanilla extract
– 1 c. of very finely chopped pecans
– 1/4 tsp. of salt (optional)
– Powdered sugar

With a dash of this and that, your crumpets will magically appear:

1/ Preheat oven to 325 degrees.

2/ By hand or mixer, cream the butter and granulated sugar until smooth.

3/ Slowly add in the flour, vanilla, nuts and salt. Continue mixing until you have created soft, crumbly dough.

4/ Form your crumpets by hand-rolling a pinch of the dough into a 1-inch ball.

5/ Bake for 15 minutes on an ungreased cookie sheet, one inch apart, until lightly browned.

6/ Roll warm (slightly cooled) cookies in the powdered sugar.

7/ Once cooled, roll cookies in the powdered sugar again.

Now, it’s time to make them magically disappear…

ALTERATION: Swap in almonds and/or almond extract for even more decadent flavor. And if you want to throw in a little cinnamon, too… be my guest.
